Yeast loves to eat sugar in a warm, moist environment where they will multiply in numbers. As the yeast munch away on their sugar, carbon dioxide is released. The carbon dioxide is trapped in the rising bread. This is what causes the pizza dough to rise. Air pockets are left in the dough and give pizza its crunchy goodness. As you eat, look at the crust and see if you can spot the pockets of air.
